Recipe: Chicken Marrakesh

I have another delicious slow-cooker recipe to share and this dish has originated in Morocco. I eat this one frequently because it’s incredibly healthy and also manages to be absolutely binge-worthy. The spices in this meal mixed with the sweetness of cooked sweet potato and carrots make this dish great. The thick chunks of tender chicken, the cooked chickpeas and the acidity of the diced tomatoes make the dish ever better.

This meal is packed full of important vitamins and nutrients including Vitamin A, Vitamin C, Vitamin K, Beta Carotene, Fiber, Antioxidants and Potassium, plus much more. This dish is also high in protein, low in fat and full of health-friendly complex carbohydrates.

-2 Pounds of Chicken Breast cut into cubes

-2 Large Sweet Potatoes, peeled and diced.

-2 Large carrots, peeled and diced.

-1 Onion

-4 Cloves of Garlic

-1 Can of Chickpeas, drained and rinsed.

-1 Can of Diced Tomatoes

-1/2 tsp Turmeric

-1/2 tsp Cumin

-1/2 tsp Cinnamon

-1/2 tsp Black Pepper

-3/4 tsp Salt

To make this dish, start by preparing and adding onion, garlic, sweet potatoes, carrots and chickpeas to your slow cooker.

Afterwards, add your diced chicken to the top.

Then add your spices on top of the chicken.

Finally, spread your diced tomatoes across the top of your dish.

Stir it and turn your slow cooker on high. Leave this dish to cook on high for 4 hours or until the sweet potatoes go soft and break apart when stirred.

Stir every hour or two as possible.

And finally, enjoy!
